Enlist Adam's Rib Smokehouse (1210 State St., Salem; 503-362-2194; to help with your holiday dinners. The smokers are working overtime to produce succulent boneless, double-smoked pit hams and fully-cooked turkeys that are brined then smoked. Hours are 10 a.m. to 8 p.m. Monday through Thursday, until 9 p.m. Friday and 11 a.m. to 9 p.m. Saturday.
